A great cup comes down to three things: how much tea, how hot the water is, and how long it steeps. Here is how to get each one right.
Three things decide how your cup tastes.
Use 1 tablespoon of leaves for each cup. Making iced tea? Use 2, because the ice waters it down a little. Matcha is different: ½ teaspoon for a bowl.
Boil the water. For black and herbal tea, let it cool for 1 to 2 minutes. For green tea and matcha, let it cool for about 5 minutes, because water that is too hot makes them bitter.
Set a timer, then take the leaves out. Green tea turns bitter if it steeps too long. With most of our herbal teas, a longer steep brings out more flavor.
